The Famous Apam Balik in Miri that everyone’s talking about!

Greeting foodies! When was the last time you went to your local Pasar Malam in Miri to grab some of your favourite snacks? There’s loads of food you can find there such as, Keropok Lekor, Kuih Penyaram, BBQ Chicken Wings, Roti Canai and the list just goes on! Let’s not forget, the famous Apam Balik in Pasar Malam Saberkas Miri that everyone’s talking about.

Apam Balik, a.k.a. Martabak Manis, is a type of Malaysian Pancake that is well loved by people of different ages and can be found anywhere in Malaysia. It is also a snack found in our neighbouring countries like Brunei, Indonesia and Singapore. There’s a couple varieties to this sweet-tasting snack, either being thick and soft, or thin and crispy. Nevertheless, both versions are equally delicious and enjoyable to munch on. The common ingredients used to make this pancake batter includes, flour, eggs, sugar, baking soda and water.

This Uncle who has been selling Apam Balik for many years in Miri is pretty famous among the locals as there’s always a queue at the stall in the afternoon. After trying it out, it is understandable why customers are always coming back for more. It’s because his buttery Apam Balik taste really good!

Uncle’s “Secret” Apam Balik Batter

Firstly, the Uncle’s “secret” batter is poured into a round iron pan that has been brushed with butter or margarine to avoid it from sticking onto the pan. Next, the batter is left to cook until little bubbles starts to form on top. That’s when the Uncle proceeds with adding a generous amount of traditional fillings which is usually crushed peanuts and sugar.

The Uncle then again adds a splatter of butter onto the half-way cooked pancake, causing it to melt and coat the peanuts and sugar. This gives it that nice caramelize and nutty flavour. Moreover, the Uncle lets it cook through until the edges has crisp up and the bottom of the pancake has turned golden brown. That’s when you would know it’s ready.

He then folds the Apam Balik into half and sets it aside for it to rest before packing it up for customers. If you think that’s the last part of butter, embrace yourself because there’s still more.

Lastly, the Kakak adds another spoonful of butter onto the thick and soft Apam Balik. Being still steamy hot, it just melts down into the pancake causing it to soak up the flavours and being so moist whenever sinking your teeth into it. And there you have it, Apam Balik being packed up and ready to be enjoyed with your loved ones.
